Self taught skills and your resume....What's the best approach?

What recommendations do you make to candidates that struggle to sell/exhibit self-taught skills on a resume and while interviewing? Self-taught skills can be great additions to one's background, however without evidence (projects, work experience, deliverables, etc.) many employers are less likely to consider self-taught skills for their positions. I would like to get some insight from my peers so that I can help better position my candidates.

I would lean towards the belief that these self taught skills are marketable within the person's line of sight. Languages are no-brainers.

Matt, it would be helpful if you could give some examples of skills and thumbnails of the people who learned these skills.
